Guacamole and avocados feature heavily in Mexican cuisine. At Rancho Grande Mexican Grill, the kitchen goes through pounds of avocados. “We go through three or four boxes a week,” restaurant owner Juan Murillo said. “It’s not just a couple of avocados.
